Low fat Ranch dressing

Ranch dressing
Ingredient list

4 tsp. olive or vegetable oil
2 tsp. cider vinegar
artificial sweetener equivalent to 2 tsp. sugar
1/4 tsp. dried marjoram
3/4 cup buttermilk
3 tbsp. plain non-fat yogurt
2 tbsp. fat-free mayonnaise
2 tbsp. finely chopped onion
2 tbsp. minced fresh parsley
1 garlic clove, minced
Instructions

In bowl, combine oil, vinegar, sweetner, and marjoram. Whisk in buttermilk, yogurt, and mayonnaise. Stir in onion, parsley, and garlic. Cover and refrigerate for 6 hours or overnight to thicken. Whisk before serving. Refrigerate dressing at all times.

Dinner rolls or biscuits

5 cups flour
1 cup crisco
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
4 Tbsp. sugar
1 pkg. dry yeast
1/2 cup warm water
2 cups butttermilk
Instructions

Put yeast in bowl ~pour in water~ let stand. Mix dry ingredients. Add crisco to water and yeast. With mixer, start working dry ingredients along with buttermilk into yeast ~water and crisco. Finish blending with hands. Take from bowl and mix with a little flour on counter until well blended. Put back in bowl & cover with cloth. Roll & cut out. Bake for approximately 12 minutes at 400 degrees.

Whoopie pies

Ingredient list

1/2 c. shortening
1 c. sugar
1 egg
1 tsp. vanilla
1 3/4 c. flour
1/2 c. cocoa
1 1/4 tsp. baking soda
1/8 tsp. salt
1 c. buttermilk
Creme Filling:
1/4 c. butter
1/4 c. shortening
1 c. marshmallow creme
1 1/2 tsp. vanilla
1 1/4 c. confectioners’ sugar
Instructions

Cream shortening and sugar. Add egg and vanilla; beat well. Combine flour, cocoa, baking soda and salt. Add alternately with buttermilk to creamed mixture. Drop by tablespoons 2″ apart onto lightly greased cookie sheet. Bake at 375ยบ for 8 -10 minutes or until cookie springs back when touched lightly in center; cool. Prepare creme filling: cream butter and shortening. Gradually beat in 1 c. marshmallow creme. Blend in vanilla and confectioners’ sugar. Beat to spreading consistency. Spread bottom of one cookie with 1 tablespoon of filling. Cover with second cookie.

No-Knead Irish Soda Brown Bread

Prep Time: 10 min.
Total Time: 50 mins., plus cooling time

Ingredients

2 cups whole wheat flour
1 cup all-purpose flour
2 tsp baking soda
1 tsp salt
1 tbsp molasses
2 cups buttermilk
3 tbsp unsalted butter, melted

Directions

1. Preheat oven to 400F. Line a baking sheet with parchment paper.

2. In a large bowl combine whole wheat flour, all-purpose flour, baking soda and salt.

3. In a separate bowl combine molasses, buttermilk and melted butter. Pour liquid ingredients into flour mixture. Stir with a wooden spoon until dough comes together. Tip mixture onto a lightly floured work surface. Shape into a round loaf shape and place onto prepared baking sheet. Using a sharp knife slice a large X in the top of the loaf.

4. Bake in the oven for 35-40 mins., until the dough is golden brown on top and sounds hollow when tapped on the bottom. Remove loaf to a wire rack. Let cool 1 hour., before slicing.
