2 cups flour
1 1/4 cups sugar
2 tsp soda
2 tsp cinnamon
1 and a 1/2 cups shredded carrots
1 and a 1/2 cups shredded apples
3/4 cups coconut
1/2 cup dates or raisins
1/2 cup nuts
3 eggs
1 cup oil
1/2 tsp salt
1 tsp vanilla
Instructions

Combine dry ingredients. Add rest of ingredients and mix. Bake at 375 degrees in muffin tins for 18 minutes or more.

Big batch cookies, or 10 cup cookies

1 Cup Peanut Butter
1 Cup White Sugar
1 Cup Brown Sugar
~Cream Butter or Margarine with Peanut Butter & Sugars
~Add 2 eggs, mix well

~1 Cup Coconut
~1 Cup Butterscotch Chips
~1 Cup Chopped Walnuts
Instructions

~Cream Margarine,(or Butter) Peanut Butter, & Sugars
~Add Eggs, mix well
~Mix together: Flour, baking soda, baking powder,
Oatmeal- add to creamed mixture
~Stir in: Coconut, Chocolate Chips, Butterscotch Chips, Cut Chopped Walnuts

Heat Oven to 350`

Place heaping tablespoon of dough on greased baking sheet. Makes about 6 dozen cookies

Bake for 10-12 minutes

Ingredients

1 box chocolate cake mix
1 cup 35% whipping cream
3 tbsp sugar
1 tsp vanilla extract
1 cup toffee pieces
1 cup desiccated coconut flakes

Preparation Instructions

1. Cook chocolate cake in a 9 x 13 inch baking pan according to package directions. Let cool completely.
2. Whip cream with an electric hand mixer until stiff. Mix in sugar and vanilla. Spread whipped cream over top of cooled chocolate cake. Top with toffee pieces and coconut flakes.

Ingredients

1 pack ramen noodles
1/2 can coconut milk
1 tsp thai curry paste
1/2 tsp fish sauce
1/2 cup coleslaw mix
coriander
squeeze of lime

Preparation Instructions

Bring 2 cups of water to a boil. Add curry paste and seasoning packet from soup. Add coconut milk, fish sauce and noodles. Simmer until noodles are cooked. Pour into bowl over coleslaw mix. Top with coriander and a squeeze of lime.
