4 Tbsp chopped fresh basil
1 Tbsp chopped fresh parsley
1 Tbsp chopped fresh oregano,or dried
1 Tbsp minced garlic
2 Tbsp lemon juice
4 salmon filets 5 0z

4 green olives (IF you like olives)

Instructions
Heat the grill, lightly spray the grill rack or broiler pan with cooking spray. Position the cooking rack 4-6 inches from heat source. In a small bowl, combine basil, parsley, minced garlic and lemon juice. Spray the fish with cooking spray. Sprinkle with black pepper. Top each filet with equal amount of the basil garlic mix. Place the fish herb side down on the grill. Grill over high heat. When the edges turn white, after about 3-4 minutes, turn the fish over and place on aluminum foil. Move the fish to a cooler part of the grill or reduce heat. Grill until the fish is opaque throughout when tested with the tip of a knife and an instant -read thermometer inserted into the thickest part of the fish
reads 145 degrees (abs 4 minutes longer). Remove the salmon and place on warmed plates..garnish with olives and lemon slices.

Pumpkin muffins with cream cheese filling
Ingredient list
1 3/4 cups flour
1 tbs pumpkin spice
1 tsp baking soda
1/2 tsp salt
1 15 oz can pumpkin puree
1 cup sugar
1/2 cup brown sugar
2 eggs
1/2 cup vegetable oil (or applesauce) 1 tbs vanilla extract
FILLING:
8 oz cream cheese
1/4 cup sugar
1 egg yolk
2 tsp vanilla extract
Instructions
Preheat oven to 375. In medium bowl, whisk flour, pumpkin spice, baking soda, and salt until well combined, set aside. In large bowl, whisk together pumpkin, sugar, and brown sugar. Beat in eggs, oil, and vanilla. Slowly whisk in the flour mixture, until there are no lumps. Fill muffin tins 3/4 full. In medium bowl, beat cream cheese until smooth. Add sugar, egg yolk, and vanilla, and beat until combined. Top each muffin with about 1 tbs of cream cheese mixture and use tooth pick to slightly swirl into batter. Bake muffins for 18-20 minutes.

Dinner rolls or biscuits
Ingredient list
5 cups flour
1 cup crisco
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
4 Tbsp. sugar
1 pkg. dry yeast
1/2 cup warm water
2 cups butttermilk
Instructions
Put yeast in bowl ~pour in water~ let stand. Mix dry ingredients. Add crisco to water and yeast. With mixer, start working dry ingredients along with buttermilk into yeast ~water and crisco. Finish blending with hands. Take from bowl and mix with a little flour on counter until well blended. Put back in bowl & cover with cloth. Roll & cut out. Bake for approximately 12 minutes at 400 degrees.

Pasta with creamy sauce
1 lb Ronzoni pasta noodles
12 beaten eggs
1 stick of butter
1 1/2 c. grated Parmesan cheese
1 pt of milk
1 can of chicken stock
Instructions
Cook noodles and drain. Add eggs, butter and cheese and milk and chicken stock. Bake 325 for 1 hour. If browning too quick lower temperature to 275 degrees.

Whoopie pies
Ingredient list
1/2 c. shortening
1 c. sugar
1 egg
1 tsp. vanilla
1 3/4 c. flour
1/2 c. cocoa
1 1/4 tsp. baking soda
1/8 tsp. salt
1 c. buttermilk
Creme Filling:
1/4 c. butter
1/4 c. shortening
1 c. marshmallow creme
1 1/2 tsp. vanilla
1 1/4 c. confectioners’ sugar
Instructions
Cream shortening and sugar. Add egg and vanilla; beat well. Combine flour, cocoa, baking soda and salt. Add alternately with buttermilk to creamed mixture. Drop by tablespoons 2″ apart onto lightly greased cookie sheet. Bake at 375º for 8 -10 minutes or until cookie springs back when touched lightly in center; cool. Prepare creme filling: cream butter and shortening. Gradually beat in 1 c. marshmallow creme. Blend in vanilla and confectioners’ sugar. Beat to spreading consistency. Spread bottom of one cookie with 1 tablespoon of filling. Cover with second cookie.

Jam Cookies
1 c. butter
1/2 c. sugar
1/2 c. Karo Dark corn syrup
2 eggs, separated
2 1/2 c. sugar
2 c. chopped nuts

Instructions
In bowl, with mixer at medium speed, beat butter and sugar until smooth. Beat in Karo and egg yolks. Stir in flour. Chill. Shape into 1″ balls. Dip into egg whites, slightly beaten. Roll in nuts. Place 2″ apart on greased cookie sheet. With thumb, make indentation in center of each cookie. Bake in 325º oven 20 minutes or until golden. Fill with jam. Cool. Makes 4 dozen.

Peanut Butter Fudge
Ingredient list
2 cups white sugar
2 cups packed brown sugar
2 tablespoons butter
1 – 16 oz. jar of chunky peanut butter
1 – 8 oz. jar of marshmallow fluff
Instructions
Butter 9″ x 13″ baking pan.
Over medium heat in a heavy 3 quart sauce pan put:
2 cups white sugar, 2 cups packed brown sugar, and 2 tablespoons butter.
Stir constantly with a wooden spoon until completely dissolved.
Slowly increase heat until mixture comes to a rolling boil.
Stir constantly for 3 minutes.
Remove from heat.
Add jar of chunky peanut butter and jar of marshmallow fluff.
Mix thoroughly and pour into greased baking pan.
Cool before cutting.

Sweet and sour brisket
3 and 1/2 pounds 1st cut Beef Brisket
2 cups Heinz ketchup
1 cup brown sugar
1 and 3/4 cup apple cider vinegar
2 packages Lipton Onion Soup Mix
6 large cloves of garlic
1 tablespoon pepper
Instructions
Place all ingredients (except brisket) in a bowl and mix well.
Divide marinade in half and marinate brisket for 24 hours.
Place brisket and the marinade you marinated it in into baking pan, cover and bake 2-3 hours at 350* – fork tender.
After cooking, refrigerate overnight.
Take out and slice thinly AGAINST the grain (while cold).
Place in clean baking dish, cover with remaining marinade and reheat at 350* 15-20 minutes until hot.

Twice baked potatoes
1 large block Velveeta cheese
7 large baking potatoes
1 stick of butter
3/4 cup milk
Salt and pepper to taste
Instructions
Bake potatoes at 425* for 1 and 1/4 hours.
Cut in half and scoop out and mash the insides – save 8 skins.
Mix potato with 1/3 of the cheese, milk, butter, salt and pepper.
Whip into mashed potatoes and put back into skins.
Cut slices of Velveeta and put one slice on each 1/2 potato.
Reheat 10-15 minutes at 375* until hot and bubbly.
