This recipe comes from “Apple Butter Bonanza,” a cookbook created by Kandi to raise money for her town’s historical society in Front Royal, Virginia.
INGREDIENTS
1 1/4 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/8 teaspoon nutmeg
1 cup milk
1/4 cup apple butter
2 tablespoons melted butter
1 egg
Syrup and pecans for topping
In a medium bowl, whisk together flour, sugar, baking powder, cinnamon, ginger, salt and nutmeg.
In a large bowl, stir together milk, apple butter, melted butter and egg.
Fold the wet mixture into the dry mixture until completely incorporated.
Ladle the batter onto a preheated skillet or griddle set at 325 degrees and cook the pancakes for 3-5 minutes on each side until deep golden brown.
Serve with melted butter, syrup and pecans on top. Enjoy!

Ingredient list
6 large eggs
1 cup of milk
1 cup all purpose flour
dash of salt
1 tsp vanilla extract
5 Tbsp butter
Instructions
1. Preheat oven to 425 degrees.
2. As oven preheats, put the butter in an ungreased 9×13 baking dish and place in the oven, just until melted.
3. Place the eggs, milk,flour,salt and vanilla in a blender; cover and process until smooth. Pour batter into baking dish, over melted butter.
4. Bake for 22-27 minutes or until edges are golden brown and puffy.
5. To serve, sprinkle generously with powdered sugar (and syrup
if desired).

Swedish/norwegian pancakes

Ingredients
1 c. milk
2 eggs
2 tbsp sugar
2/3 tbsp melted shortening or cooking oil
pinch of salt
1/2 c. flour
Preparation instructions
Combie all ingredients to make batter. Use flat greased frying pan. Put approx. 3 tbsp batter in pan, swirl around so batter runs toward edge. In a few minutes, turn over. Serve with syrup, strawberry jam, or fresh berries.
Eat with fork or rolled and sprinkled with powdered sugar.
