1 egg
4 pork chops, 3/4 to 1-inch thick
1 c. bread crumbs
1/2 tsp. pepper
3 T. flour
1/4 to 1/2 c. chicken broth
1/2 large onion, sliced
1 to 2 T. butter
Instructions
Beat egg in small bowl. Mix bread crumbs with flour and pepper; pour onto waxed paper. Dip pork chops into egg, then roll through bread crumb mixture. Dip pork chop into egg and crumb mixture a second time. Melt butter in 10-inch skillet. Place pork chops into skillet and brown both sides lightly. Pour chicken broth into casserole dish, about 1/4 to 1/2-inch deep. Place pork chops into dish and cover with onions. Bake, covered for 35-40 minutes at 425º. Add more broth, if necessary.

Instructions
Mix all ingredients in a large bowl. Make meatballs, 1 to 1 1/2-inch in diameter. Brown in 1/4-inch oil. Drain on paper towel, place in casserole dish. Prepare gravy: Drain oil from pan. In bowl, combine flour, water, salt and pepper and gravy master. Mix and place in heated frying pan. Stir until smooth; pour over meatballs.

2 T. vegetable oil
3 lb. boneless chuck, cut into 1″ pieces
2-3 cloves garlic, finely chopped
4-6 T. chili powder
3 T. flour
2 tsp. ground cumin
1 T. leaf oregano, crumbled
2 (13 3/4-oz.) cans beef broth
1 tsp. salt
1/4 tsp. pepper
1 (15-oz.) can pinto beans, optional
1 (8-oz.)container sour cream
1 lime, cut into wedges
Instructions
Heat oil in 4-qt. kettle over medium heat. Add beef and cook; stir frequently, until meat changes color but does not brown. Reduce heat to low; stir in garlic. Combine chili powder, flour and cumin in small cup. Sprinkle meat with chili mixture; stir until evenly coated. Crumble oregano over meat. Add 1 1/2 cans of broth; salt and pepper. Stir until well blended. Bring to boil over medium heat; stir occasionally. Reduce heat to low. Partially cover and simmer for about 1 1/2 hours; stir occasionally. Add remaining broth. Simmer for 30 minutes longer or until meat is almost falling apart. Cool; cover and refrigerate overnight to ripen flavor. Reheat chili. If using pinto beans, drain and stir into chili. Garnish with sour cream; serve with lime wedges. Makes 8 servings.

1. Mix all ingredients together until well blended and form into meatballs. I made them fairly-large – about 9 per pound of meat. (mostly because I get bored rolling meatballs. You could also make these burgers, but balls are more fun. [Heh. I said ‘balls are more fun.’]) (For details on the science of mixing meatballs, read this.)
2. On the grill: Heat grill to high, then cook meatballs five minutes with lid closed, flip, and cook an additional five minutes, until nicely browned.
In the oven: Preheat oven to 400F and cook 20 minutes or so.
On the stovetop: Brown in a hot saute pan, then cover with a lid and reduce heat to medium-low until cooked through.

Ingredients 1/2 kg. (Rump beef) cut by knife in squares,1 bunch green onion, oregano (4 or 5 strings)2 onions, 4 tbsp oil,3 Hard eggs.At ease: Cumin, salt, sweet paprika and olives. 1) Cut the onions into small cubes.

Beef picadillo filling and empanada assembly:
Combine the beef, paprika, cumin, salt and pepper in a large bowl, mix all the ingredients together and chill until ready to use.
heat the oil in a large frying pan or sauté pan, add the onions and salt, cook until the onions are soft, about 8 minutes.
Add the meat mixture to the onions and cook on medium heat until the meat is done, stir frequently.
Let the meat mixture or picadillo cool down, and then mix in the chopped green onions and chopped oregano.
To assemble the empanadas add a spoonful of the meat mixture on the center of each empanada disc, add a slice of egg and sliced olive.
Brush the edges of the empanada discs ( I buy them frozen, and defrost for use) with the egg whites, you can also use water but the egg white is a good natural “glue” that helps seal the empanada.
Fold the empanada discs and seal the edges gently with your fingers, twist and fold the edges of the empanadas with your fingers, as a final step use a fork to press down and finish sealing the empanadas.
Lightly brush the top of the empanadas with the egg yolk; this will give them a nice golden glow when they bake.
Let the empanadas rest in the fridge for about 30 minutes or until ready to bake.
Pre-heat the oven to 400 F and bake for about 20-25 minutes, until golden on top.
you can pan fry in oil until brown or crisp.
Serve warm with chimichurri sauce or other dipping sauces.
3 cups extra virgin olive oil
2 large onions – preferably Vidalia – chopped coarsely
8 cloves of garlic – chopped
Zest of 1 lemon
Juice from 1 lemon juice
1 tablespoon red pepper flakes
1 teaspoon: oregano, thyme, marjoram, savory, sage, and basil
For lamb, add 1/2 cup chopped rosemary (fresh rosemary is best but, dry will do in a pinch).

Add all ingredients in a bowl and mix well. Taste and adjust amounts as needed. Best if made at least a day ahead of time to allow flavors to meld. If you have any left over, you can store it in the fridge for quite a long time.

This is a crowd-pleaser, and not just for cinco de mayo! I made it for my sisters birthday this past week-end and it was a big hit. The margarita’s helped….
Ingredients
1 pork shoulder – 5-6 lbs
1 onion, peeled
1 orange, washed, and quartered
1 lime, washed, halved
1 tblsp cumin
1 bay leaf
1 tsp peppercorns
3 cups water
Preparation Instructions
Place all ingredients in a slow cooked on high, or in a dutch oven, covered, at 325. Cook 4-5 hours, or until meat is tender and falls apart.
Pull meat apart with a fork, and add 1/2 cup cooking liquid and salt to taste.
Serve with corn or flour tortillas, and your fave toppings- guacamole, grated cheese, fresh salsa, coriander, sour cream and cholula hot sauce.
Black bean, corn and coriander salad makes a great side dish.
I’ve seen variations of this recipe in several people’s book, and have always been skeptical. If you’re up for something new, then like me, be ready to have your world rocked: Norene Gilletz’s recipe from Gourmania.com will make you a believer.
Ingredients
3 onions, sliced
4 1/2 to 5 lb. beef brisket, well-trimmed
4 cloves garlic, crushed
Salt & pepper, to taste
1 tsp. dried basil
1 tbsp. paprika
1/4 cup apricot jam
2 tbsp. lemon juice
1 cup diet cola (use regular cola if you can’t find diet)
Preparation Instructions
1. Spray a large roasting pan with non-stick spray. Place onions in pan; place brisket on top of onions. Rub meat on all sides with garlic, seasonings, jam and lemon juice. Pour cola over and around brisket. Marinate for an hour at room temperature or overnight in the refrigerator.
2. Preheat oven to 325°F. Cook covered. Allow 45 minutes per lb. as the cooking time, until meat is fork tender. Uncover meat for the last hour and baste it occasionally. Remove from oven and cool completely. Refrigerate overnight, if possible. Discard hardened fat which congeals on the surface. Slice brisket thinly across the grain, trimming away any fat. Reheat slices in the defatted pan juices.
Yield: 12 servings. Reheats and/or freezes well.
