Oven baked caramel corn

Ingredients

1 tbsp vegetable oil
½ cup popcorn kernels
½ cup unsalted butter, at room temperature
1 cup granulated sugar
¼ cup golden syrup or corn syrup
1 tsp vanilla extract
½ tsp salt
½ tsp baking soda

Directions

1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.

2. In a large pot or Dutch oven heat oil over high heat. When oil is very hot add popcorn kernels and cover with lid. Let kernels pop, shaking the pot often, for about 4 min. When popping slows or stops remove from heat and tip popcorn into a large bowl.

3. In a medium sized saucepan stir together butter, sugar and golden syrup. Bring to a boil over medium-high heat and let bubble until mixture turns amber in colour, about 4-5 min. Remove from heat and stir in vanilla extract, salt and baking soda. Pour over popcorn and toss well to combine.

4. Pour popcorn mixture onto prepared tray in an even layer. Bake for 30 min., until dark golden. Remove from oven and mix popcorn with a spatula. Let cool completely. Break into pieces before serving.

Old time popcorn balls

Ingredients

20 c. popped popcorn (about 1 c. unpopped)
2 c. sugar
1 c. water
1/2 c. light corn syrup
1 tsp vinegar
1/2 tsp salt
1 tsp vanilla

Preparation instructions

Remove all unpopped kernels from popped corn. Put popcorn i a large roasting pan; keep warm in a 300° oven. Butter the sides of a 2-qt saucepan. In it combine sugar, water, corn syrup, vinegar, and salt. Cook to 270° (soft-crack stage), stirring frequently (mixture should boil gently over entire surface). Remove from heat; stir in vanilla. Slowly pour mixture over hot popcorn. Stir just till mixed. Shape with buttered hands into 2 1/2 to 3 inch balls.
