Papa Jimmy’s Cornbread

Note from Jessie, author of “Papa Jimmy’s Family Cookbook”: Allene’s cornbread recipe comes from the years when her mother, Lessie, was raising a family through the Great Depression and World War II. Times were hard, and beans with cornbread were often all she could make. Lessie would sometimes cry from the strain, yet Allene and the children she raised, remembered those same meals as favorites. Made often–not out of necessity, but because they were so good.

2 eggs
1 ½ cup buttermilk
1 ½ cup cornmeal
1/2 cup flour
2 tsp baking powder

Directions:
Preheat oven and 9″ cast iron pan to 450°F. Mix ingredients (except butter) until just combined. Melt butter in hot cast iron pan, swirl to coat.

Pour batter in hot buttered cast iron and bake for 20 min, or until toothpick inserted in the center comes out clean. Allow to cool for 15 min and serve.
