Ingredients
1 1/4 c. flour
3/4 tsp baking soda
1/2 tsp salt
1/2 c. butter or margarine
1/2 c. peanut butter
1/2 c. granulated sugar
1/2 c. packed brown sugar
1 egg
1/2 tsp vanilla
Preparation instructions
Stir together flour, soda, and salt. In a mixer bowl beat butter for 30 sec. Add peanut butter and sugars; beat till fluffy. Add egg and vanilla; beat well. Add dry ingredients to beaten mixture; beat till well combined/ Shape dough into 1 inch balls; roll in granulated sugar, if desired. Place 2 inches apart on an ungreased cookie sheet; crisscross with the tines of the fork. Bake in a 375° oven about 10 minutes. Cool about 1 minute before removing to a wire rack.

24-hour fruit salad

Ingredients
1 (20 oz) can pineapple chunks
3 slightly beaten egg yolks
2 tbsp sugar
2 tbsp vinegar
1 tbsp butter or margarine
Dash of salt
Preparation instructions
Drain pineapple; reserve 2 tbsp syrup. To make custard, in a heavy small sauce pan combing reserved pineapple syrup, egg yolks, sugar, vinegar, butter or margarine, and salt. Cook and stir over low heat about 6 minutes or until mixture thickens slightly and coats a metal spoon.
Cool to room temperature. In a large bowl combine pineapple chunks, cherries, oranges, and marshmallows. Pour custard over, stir gently. Beat the whipping cream till soft peaks form. Fold whipped cream into fruit mixture. Turn into a serving bowl. Cover and chill 24 hours or overnight.

Ostkaka-cheese cake

Ingredients
25 to 30 graham crackers, rolled fine
1/2 c. butter or margarine, softened
2 tbsp powdered sugar
1 (3oz) pkg lemon gelatin
1 c. hot water
1 (8oz) pkg cream cheese, softened
1 c. sugar
1 tsp vanilla
1 pt whipping cream
Preparation instructions
Blend well cracker crumbs, butter and powdered surgar with fork or pastry blender. Press crumbs firmly on bottom and sides of two 9-inch pie pans, reserving small amount to sprinkle on top. Dissolve gelatin in hot water. Cool. Cream cheese, sugar and vanilla. Stir into gelatin; mix until smooth (low speed on mixer). Whip cream and fold into cheese mixture. Pour into prepared crusts. Sprinkle with remaining crumbs. Chill before serving. May be served plain or with berries.

Kottbollar-swedish meatballs

Ingredients
1/2 c. chopped onion
3 tbsp butter or margarine
1 beaten egg
1 c. light cream
1 1/2 c. soft bread crumbs
1/4 c. finely snipped parsley
1 1/4 tsp salt
ground beef
Preparation instructions
Cook onion in 1 tbsp of the butter or margarine till tender. In a mixing bowl combine egg and cream; stir in cooked onion, bread crumbs, parsley, salt, nutmeg, ginger and pepper. Add ground beef or meats; mix well. Chill mixture. Shape chilled meat mixture into 3/4 to 1 inch balls.
Brown meatballs, half at a time, in the remaining 2 tbsp butter or margarine; remove from skillet. Stir flour, bouillon granules, and coffee crystals into pan drippings; add 1 1/4 c. water. Cook and stir till thickened and bubbly. Add meatballs. Cover; simmer about 30 minutes, basting meatballs occasionally.
May use mixture of 3/4 lb ground beef, 1/2 lb ground veal, and 1/4 lb ground pork for the meatballs.

Waffle cookies

Ingredients
1 Stick Margarine
3/4 C. Sugar
1 Egg
2 squares chocolate ( or 3T cocoa & 1 T fat for each sq of choc.)
1/2 t Vanilla
1/2 C. Milk
2 C. Flour
1/2 t soda
1/4 t salt
Preparation instructions
Mix all of the ingredients together and bake in a waffle Iron
Chocolate Butter Cream Frosting:
6 T Butter (softened)
3/4 C. Cocoa (or less)
2 2/3 C. Powdered Sugar
1/3 C. Milk
1 t vanilla
Mix all together with an electric mixer

Apple cake

Ingredients
1/2 c. butter or margarine
2 c. sugar
2 eggs
2 c. flour
1 1/2 tsp. baking soda
Dash of cinnamon
Dash of salt
4 c. raw apples, diced
1/2 c. walnuts
TOPPING:
1 scant c. brown sugar (do not pack down)
1/4 c. soft butter
2 T. flour
Preparation instructions
Mix together and put into a greased 9 X 13-inch pan. Combine topping ingredients and put on top of batter. Bake in 350 degree oven for 30-40 minutes. Serve with whipped cream or ice cream.

Broccoli-cheese soup

Ingredients
1 1/2 c. boiling water
2 chicken bouillon cubes
1 (10 oz.) pkg. frozen, chopped broccoli
2 T. finely-chopped onion
2 T. margarine
3 T. flour
1/8 tsp. salt
1/8 tsp. pepper
2 c. milk
5 oz. shredded Velveeta cheese (1 c.)
Preparation instructions
Dissolve the bouillon cubes in the boiling water; add broccoli and cook. Remove from heat.
In another pan, cook onion in margarine. Do not brown. Stir in flour, salt and pepper; remove from heat. Stir in part of the milk until you have a paste. Add remaining milk and cheese until melted. Add broccoli and the liquid. Heat until steaming, but do not boil.
